I had this hearty soup for the first time when I was about 6 months pregnant and my beloved sister made this for us when she invited us for dinner with her family. I don't remember if I ever asked her about the recipe but today I tried to make it based on my memory of that lovely night.
The main ingredients are actually basic, only onions, garlic, leek, and off course broccoli.

First after you wash the broccoli florets, steam for a while then blend. Put a side some florets so that you can chop them to add some texture to the soup. Just blend them all together if you baby still needs soft lumpy meal (yes, this is an adult meal that baby can also enjoy)
Melt some butter, then cook onion and garlic in it until softened, stir the broccoli in, cover with chicken broth, simmer for about 15 minutes.
Reduce the heat, stir in the cheese cubes, milk and leek.
In small bowl, mix the cornstarch with water until dissolved. Stir in the soup and stir often until the soup become thick. Put some salt and pepper to taste.
Serve warm with garlic bread, yum!

1 pc onion
2 cloves garlic
1 pc leek
1 C cheddar cheese, cut into cubes
2 C milk
4 C chicken broth
1/2 C butter
2/3 C cornstarch, mix well with water until dissolved
